One of my favorite indulgences used to be the good old burger. A char-grilled, crispy, juicy in the middle patty, adorned with lettuce, pickles and your choice of sauces, is something most of us have grown up to love.
So when I chose to move to a whole food plant-based diet, one of the first things I had to find a substitute for was a good burger!
So I began searching online and found some really great recipes, which over many iterations, has resulted in what is at least for me (and my partner), the best vegan bean burger recipe we’ve eaten!
Don’t be put off by the list of ingredients, it is really simple to make and you can store the mixture once made in the fridge for up to 3 days or freeze, if you don’t eat immediately. Here’s How to Make The Best Vegan Bean Burger Recipe in the World…
Ingredients for 2-4 burgers:
2 small red onions
2 cups of chopped mushrooms
3 cloves of garlic
1 chili or to taste
½ a cup of gluten free toasted bread or cracker crumbs
2 cups black-eyed beans
½ a cup pickled beetroot
Half a red or yellow pepper
1 tbsp pumpkin or sunflower seeds
Spice paste :
1/4 teaspoon pepper
1/4 teaspoon salt
1 tsp paprika
½ tsp cayenne
1 tsp ground cumin
½ tsp turmeric
1 tbsp brown/steak sauce
2 tbsp ketchup
1 tbsp Dijon mustard
Juice of half a lime
2 tbsp of gram flour to bind
Step 1 – Mash in a large bowl, two cups of black-eyed beans or your preferred ready cooked bean, until you have a fairly smooth but textured paste.
Step 2 – Now finely chop the pepper and beetroot and add these to the beans.
Step 3 – Finely chop the onions, mushrooms and then gently fry (ideally in coconut oil), for about 5 minutes until soft and brown, now chop the 3 cloves of garlic and add, gently frying for a further 3 minutes. Add to the beans.
Step 4 – In a frying pan gently brown the pumpkin or sunflower seeds and add to the bean mix
Step 5 – Take the toasted vegan/gluten free bread slices or crackers, if you prefer, and blend to create crumbs. Add these to the bean mix.
Step 6 – Next combine all of the seasonings, sauces and spices in bowl with the lime juice and mix into a spice paste.
Step 7 – Add the spice paste to the bean mixture in the bowl, creating a wet, thick mixture. Add to this approximately 2 tablespoons of gram flour to bind the mix together so that it becomes drier and the right consistency to form into burger patties.
Step 8 – Now on a greased oven tray, using a spoon, form the mixture into the shape of burgers as large or as small as required. These now want baking in the oven for about 25-30 minutes on gas mark 6, turning once during this time. I have found that cooking in the over prior to grilling dries out the paste making a firmer burger.
Step 9 – If desired, you can continue cooking under a hot grill for approximately 5 minutes each side, to really crispen up the burger – this is recommended.
